Pico De Gallo

Pico de gallo or salsa fresca, is simply a chunky, fresh tomato salsa you can enjoy all day long. Serve it with a tofu scramble for a “juevos rancheros” feel, enjoy it in a burrito, add them to your favorite tacos, or serve it with tortilla chips at a party.

FEATURED INGREDIENT: TOMATO
Tomatoes are an excellent dietary source of lycopene, a great cancer-fighting agent. Tomatoes are also rich in vitamin C, biotin, and vitamin K.
NOTES:
You can use either lemon juice or lime juice in this recipe, both will work just fine.

INGREDIENTS:
4 roma tomatoes, small dice
1/2 lemon (or 1 lime), juiced
1/2 cup cilantro, finely chopped
1/2 cup white onion, small dice
1 tsp serrano (1/2 pepper), minced
salt to taste
DIRECTIONS:
Combine all ingredients in a large bowl.
