Pico de gallo or salsa fresca, is simply a chunky, fresh tomato salsa you can enjoy all day long. Serve it with a tofu scramble for a “juevos rancheros” feel, enjoy it in a burrito, add them to your favorite tacos, or serve it with tortilla chips at a party.

|You can use either lemon juice or lime juice in this recipe, both will work just fine.|
|4 roma tomatoes, small dice|
|1/2 lemon (or 1 lime), juiced|
|1/2 cup cilantro, finely chopped|
|1/2 cup white onion, small dice|
|1 tsp serrano (1/2 pepper), minced|
|salt to taste|
|Combine all ingredients in a large bowl.|
