Okay, it’s a bold statement, especially with the plethora of Thai, Vietnamese, Lebanese, Ethiopian, Italian, and Japanese flavors floating in the air. Still, Mexican food is a godsend for vegans. Savory, spicy, affordable, and filling, this Mexican power bowl will give you a protein and carb boost in the most colorful way.

Your life isn’t complete until you smash your face into one of these beauties.

This recipe works best with LEFTOVERS. If you make each and every component for this one dish, it might take a while and get overwhelming, but hey, if you’ve got leftover pico and guac from yesterday’s party, this should take you two seconds.

The innocent little black bean is a nutrient powerhouse, loaded with the big boys like folate, fiber, copper, manganese, and vitamin B1.

They help lower blood pressure, manage diabetes, regulate your digestion, and keep you full. They’re also great for a post-workout meal, since only a cup of black beans give you 30% of your daily value of protein.

Let’s get even cheaper: For fast protein, rinse a can of black beans, dump it into a bowl with lime, cilantro, and a little bit of salt, tilt the bowl up, and pour everything into your mouth. Done.
NOTES:
Don’t worry about the measurements! You might want only a tablespoon of guac. Maybe you don’t want leafy greens. It’s cool. This recipe is more of a guideline, so play around with the quantities and build this bowl to your liking.

pico de gallo
guacamole

brown rice

DIRECTIONS:
Assemble your bowl however you like. Trust your creativity and add as many or as little ingredients as you want. You can’t go wrong with Mexican flavors!
